Since childhood, we are taught to eat carrots, because it has incredibly useful properties. Want to know more about this unique vegetable? We have collected some amazing carrot properties that you might not know about.

Very soon, at the beginning of summer, the first young carrots will ripen. Be sure to include it in the diet, because it is able to restore the vitamin balance, which was shaken for winter and spring. Why this is necessary:

  • Carrot root contains lycopene, phytofluen, phytoen and carotene – our tiny helpers for a wonderful well-being.
  • Carrots contain vitamins: C and A, B1, B2, B5, B6, B9, C, E, H, K.
  • Contains essential oils needed for metabolism.
  • Contains trace elements: phosphorus, magnesium and calcium.
  • Carrots are low-calorie: 35 kcal per 100 grams.
  • Carrots significantly reduce cholesterol.

Carrots are also a natural antioxidant, and this property is preserved both in fresh and stewed. One raw carrot per day will significantly improve digestion, accelerate metabolism and help lose weight.

How to eat carrots

This root crop, with all its usefulness, still has certain limitations. Doctors know such a thing as “carotene jaundice”, which may appear among lovers of raw carrots. In order for this type of jaundice to appear, you need to eat many carrots. However, this is not dangerous for health; rather, it is more of a cosmetic problem.

To make carrots beneficial, nutritionists advise eating a salad of fresh carrots of average size every day. This is enough to saturate the body with all the necessary vitamins and minerals. The most delicious carrot is the one that grounded in a food processor and seasoned with a spoon of low-fat sour cream or yogurt.

Carrot Cupcake

To diversify the diet, try making a carrot cake – a healthy and uncomplicated dish. You will need:

  • one glass of grated carrots;
  • three eggs;
  • one tablespoon of sunflower oil;
  • one glass of wheat flour;
  • a pinch of salt;
  • sugar for taste, but not more than two tablespoons;
  • a pinch of baking powderfor the dough.

Beat eggs with butter, salt and sugar. Add flour and baking powder, mix thoroughly. Lastly, add the grated carrots and mix everything until smooth. Put the dough into a cake pan and place in an oven preheated to 180 degrees. Bake for at least an hour if it is a large cupcake. For small muffins, 20 minutes is enough. Bon Appetit!
