Quinoa is a popular pseudocereal known for its high content of protein, magnesium, and fiber. It is gluten-free and has a low glycemic index.
Quinoa has ancient origins and was a staple food for indigenous peoples, who considered it sacred.
It is an essential product for people with gluten intolerance as well as vegetarians. Quinoa is also beneficial for people with diabetes, cardiovascular diseases, or excess weight.
This grain is rich in phosphorus, calcium, potassium, zinc, and iron, and contains B vitamins. It has a high fiber content and significantly more protein than wheat, barley, or rice. It also contains a notable amount of plant-based fat—over 6% of its dry weight.
The calorie content of quinoa is 368 kcal per 100 grams. Moreover, there are no significant contraindications to its consumption.
There are three types of quinoa: white, red, and black. The most common is white quinoa, which has a neutral taste. The other two have a more intense flavor. Black quinoa is considered the most diet-friendly, as it contains the least amount of fat.
Quinoa is most often used to prepare porridges, and is also added to soups, salads, baked goods, and desserts.
